Methi chicken

Methi leaves (Fenugreek leaves) fresh or dry , have an unique way of enhancing the taste of the most simplest of dishes and that’s why this very simple chicken fry tasted extra delicious .

Ingredients

Chicken -1kg

Baby potatoes-5-6

Kasoori methi -2 tbsp

Onion -2large finely cut

Tomato -1 large

Ginger Garlic paste -1tsp

Chilli powder , Coriander powder , Turmeric powder , jeera powder and salt as required for both marination and cooking

Oil -2tbsp

To season

Bay leaves -1

Cassia(pattai)-1″

Cardmaom and cloves-1-2

Fennel seeds(sombu)-1tsp

Dried red chillies -2 or 3

Curry leaves -1 sprig

To Garnish

Coriander and Mint leaves

Method

Clean and wash chicken with salt and turmeric . Marinate it with salt , turmeric , chilli powder , coriander powder and lemon juice or apple cider vinegar and leave covered in the refrigerator for at least an hour.

Add oil in pan,then once it heats up add in the seasoning ingredients and saute them,then add onions,ginger garlic paste,then add the marinating chicken and baby potatoes along with the marinade.Mix well ,add the masala powder and salt keeping in mind we have already added them in the marinade, mix well and cook closed until chicken and baby potatoes are cooked.Then check for salt and spice , add in chilli powder and salt if required.Add in the tomatoes , dried Kasoori methi(crush it between your palms before adding )mint and coriander leaves mix well and cook closed for 5 more mins .Then serve garnished with mint leaves and coriander leaves.

Tip

*Marinate the baby potatoes along with the chicken ,this way potatoes will be more flavourful.

*i prefer to marinate the chicken overnight in the fridge.
