Green Moon beans are a power house of nutrition. They can be eaten in soups or as dhal or as pesarattu ( a dosa mads with moong bean batter ) .Sprouted beans are extra nutritious. It’s is easier to pre prepare the moong beans and freeze, so they are ready to be used in a variety of dishes as and when required .

Wash and Soak whole green moong beans over night . Then drain the water and let the soaked beans dry in a cool spot in the kitchen . You can see them sptouting .

Now cook the sprouts in a pressure cooker with a required amount of salt , for two to three whistles .

The moong sprouts are ready to be used for many different dishes . You can use them in soups , in sundal , in wraps .

If you need to freeze them , then air dry the cooked beans until there’s no moisture and portion size them and freeze .

Ingredients for Sprouted moong beans sundal

Cooked sprouted moong beans – 1 cup

Coconut -grated 1/4 cup

Green chillies -3-4

Ginger -a tiny pc

Jeera -1 tsp

To season

Oil -1 tsp

Mustard seeds -1/2 tsp

Uradh dhal -1/2 tsp

Dry red chillies -2

asafoetida -1/4tsp

Curry leaves -1sprig

Method

Grind the coconut , green chillies , jeera and ginger coarsely without water .

Add oil in pan.

Season with the seasoning ingredients.

Then add the moong dhal , sauté well .

Add in the coconut jeera powder , mix well , taste for salt .

Cook closed for 5 mins until all ingredients blend well together and

The sprouted moong beans sundal is ready .
