Long beans and Tofu sambal is an easy and quick recipe. It can be a vegetarian or a non vegetarians dish depending on the sambal ( chilli paste ) used . It’s a protein rich and fibre rich side .
Ingredients
Long beans -1bunch
Tofu – 1cup, cubed
Onion -1big , finely sliced
Tomatoes -1small , diced
Curry leaves-1sprig
Sambal paste – 2tbsp
Chilli , Turmeric powder, jeera and coriander powders , salt as per taste
Oil -1tbsp
To season
Fennel seeds ( Sombu) -1tsp
Method
Add oil in pan ,season with fennel and curry leaves . Add in the cubed tofu and shallow fry till golden brown , keep aside on a plate .
Add oil in the pan, season with fennel seeds , curry leaves , add onion and sauté until translucent.
Add in the tomatoes , long beans and the fried tofu and sauté . Add chilli, coriander, jeera and turmeric powders and salt , mix well and cook closed until beans are cooked. Then add the Sambal paste mix well and cook closed for another 5 mins and long beans Tofu Sambal is ready !!
Sambal paste :
Vegetarian version
Dry red chillies-10
Garlic -4-5pods
Shallots -4-5
Ginger
Palm sugar -2tsps
Lime juice -2tsps
Salt
Soak dry red chillies in warm water for a couple of hours
Grind soaked red chillies and the other ingredients into a smooth paste . Add oil in a deep pan and sauté the paste on low flame until the paste is cooked and the oil oozes out . Cool it to room temperature and store in a glass jar in the fridge . This Sambal can be used for curries and other vegetarian dishes .
Non vegetarian version
Dry red chillies-10
Blechan or shrimp paste
Garlic -4-5pods
Shallots -4-5
Ginger
Palm sugar -2tsps
