Baked this beauty for my daughter’s birthday! No cheese, cheese cake! Yes! There’s no cheese, just yogurt, condensed milk and cream in equal quantities and baked in a water bath on a biscuit base. That simple yet so tasty!
For Biscuit Base
Digestives /Oreo/or any other of your choice
Salted or unsalted Butter enough to combine the crushed biscuits to make a wet crumble
For the Cheesecake
Ratio of cream,condensed milk, and Greek yogurt-1:1:1
For the topping
strawberry jam or any other jam of your choice
Yesss!!! that’s all you need ,its that simple.
Crush digestive biscuits,into a powder.Add enough butter to make a wet crumble .see that the mixture can hold its shape for a while when you hols it in your palm.Press on the bottom of baking dish and keep in fridge for a about an hour until it hardens.
Pre heat oven .Mix all the above ingredients and pour on the firm biscuit base.Set in a water bath (a bigger baking dish/tray fill it with water ).Bake the cheese cake in the water bath for 20 mins @150 -180 degrees .Let it cool to room temperature then put in fridge to set and serve cold with topping of your choice.
I used strawberry jam diluted a bit with lemon juice and decorated with fresh strawberries.You can have a caramel topping or just use fresh fruits or crushed nuts .The options are just limited my your imagination .
Don’t press the biscuit base too tightly into the tin ,it gets a little too hard to cut ,you can also use a sponge cake base instead of the biscuit base.
